Recipe Instructions
- 1
Begin by boiling potatoes until soft. Once cooled, peel and mash them.
- 2
Heat oil in a pan, add mustard seeds, and let them splutter. Then add curry leaves, green chilies, ginger, garlic, and sauté for a few minutes.
- 3
Add turmeric powder and salt to the pan and mix well. Then add the mashed potatoes and mix everything together. Allow it to cool.
- 4
Shape the potato mixture into small balls.
- 5
Prepare a batter by mixing gram flour with water, salt, turmeric, and red chili powder to form a smooth, flowing consistency.
- 6
Heat oil in a deep fryer or pan.
- 7
Dip each potato ball in the batter until fully coated and deep fry in hot oil until golden brown and crisp.
- 8
Slice the pav without cutting all the way through and spread green chutney and tamarind chutney on the inside.
- 9
Place the hot fried vada between the pav and serve immediately with a fried green chili.
