Tarta de Santiago, also known as St. James Cake, is a traditional Spanish almond cake from Galicia, rich with the flavors of almonds, sugar, and eggs, topped with a powdered sugar cross of St. James.

Preheat the oven to 175°C (350°F).

Grease a 9-inch springform pan and line with parchment paper.

In a large bowl, beat the eggs and sugar until fluffy.

Gently fold in the ground almonds, lemon zest, and cinnamon until well combined.

Pour the batter into the prepared springform pan.

Bake for 30-35 minutes or until a toothpick inserted into the center comes out clean.

Allow to cool in the pan for a few minutes, then transfer to a wire rack to cool completely.

Once cooled, dust the top with powdered sugar and use a template to form the cross of St. James design.
