Spanakorizo is a traditional Greek dish that combines spinach and rice in a flavorful, simple, and healthy meal. Often seasoned with herbs and lemon for a fresh touch, it's a comforting dish perfect for any occasion.
Rinse the rice until water runs clear to remove excess starch.
In a large pot, heat olive oil over medium heat. Add onions and sauté until translucent.
Add garlic to the pot and sauté for another minute until fragrant.
Stir in the rinsed rice and cook for 2-3 minutes, letting it toast slightly.
Add fresh spinach to the pot and cook until it begins to wilt.
Pour in vegetable broth and bring the mixture to a boil.
Reduce heat to low, cover, and simmer until the rice is tender and the liquid is absorbed, about 18-20 minutes.
Remove from heat. Stir in lemon juice, dill, and season with salt and pepper to taste.
Serve warm, garnished with additional dill and lemon slices if desired.
