Puttu is a traditional and popular South Indian steamed rice cake made from rice flour and coconut. It is typically served with a side of kadala curry or banana.

Soak the rice for 4-5 hours, then grind it to a fine semolina consistency and allow it to dry.

Combine the rice flour with salt and sprinkle water little by little to get a bread crumb-like consistency.

Mix grated coconut into the flour mixture.

Fill the puttu maker with a layer of coconut followed by a layer of the rice flour mix, alternating layers until the mould is full.

Steam this setup on a pot of boiling water for about 7-8 minutes or until steam passes through.

Once ready, push the puttu out using a wooden skewer and serve hot.
