How to Make Payasam

Rinse the rice under cold water until the water runs clear.

In a heavy-bottomed pan, bring the milk to a boil.

Add the washed rice to the boiling milk, reduce the heat to low, and cook until the rice is soft and the milk has reduced to about half its original volume, stirring occasionally.

Add sugar and cardamom powder, and continue to cook on low heat until the sugar is dissolved.

Fry the cashews and raisins in ghee until golden brown, then add them to the Payasum.
