Prepare the spicy tamarind water by combining water, tamarind paste, coriander leaves, mint leaves, jaggery, and spices. Blend and strain the mixture.

Prepare the filling by combining boiled and mashed potatoes, chopped onions, cooked chickpeas, with spices.

Crack a small hole on top of each puri.
