Medu Vada

Soak urad dal in water for 4-6 hours.

Drain the water and grind the urad dal to a smooth paste, adding very little water if necessary.

Transfer the batter to a bowl, add salt, cumin seeds, green chili, curry leaves, and ginger, and mix well.

Heat oil in a deep frying pan.

Wet your hands and take a small amount of batter. Make a ball and flatten it slightly. Make a hole in the center with your thumb.

Carefully drop it into the hot oil and fry until golden brown on all sides.

Remove the vada and drain on a paper towel to remove excess oil.

Serve hot with coconut chutney and sambar.
