Madeleines are small, shell-shaped cakes from France, light and perfect for pairing with tea or coffee. These delightful little treats are soft with a distinctive bump on one side, known as the 'belly', which forms as the batter puffs up in the oven.

Brush the madeleine mold with melted butter and dust with flour, tapping out the excess.

In a mixing bowl, whisk together eggs, sugar, and vanilla extract until the mixture is pale and fluffy.

Sift in flour and baking powder and fold gently until combined.

Add melted butter and mix until the batter is smooth and fully incorporated.

Spoon or pipe the batter into the prepared madeleine mold, filling each mold about three-quarters full.
