Loukoumades
Loukoumades are traditional Greek doughnuts that are golden and crispy on the outside, while fluffy and airy on the inside. Typically served warm, they are soaked in honey syrup and sprinkled with cinnamon and/or crushed nuts.

In a large bowl, whisk together the warm water, sugar, and yeast. Let it sit for 5-10 minutes until the mixture becomes frothy.

Add the flour, salt, and vanilla extract to the yeast mixture. Mix until you form a smooth and sticky dough. Cover with a cloth and let it rise in a warm place for about 1 hour or until doubled in size.

In a deep pot or fryer, heat the oil to 180°C (350°F).

Carefully drop spoonfuls of the dough into the hot oil. Fry the doughnuts until golden brown, turning them occasionally for even coloring, about 3-4 minutes.

Remove the loukoumades with a slotted spoon and drain on paper towels.

In a small saucepan, combine honey and water and warm it over low heat until the honey loosens.

Dip the warm loukoumades into the honey syrup or drizzle it over them.

Sprinkle with cinnamon and optionally, crushed walnuts before serving.
