Kozhukatta (Sweet Rice Dumplings)
Kozhukatta is a traditional South Indian sweet dumpling made from rice flour and coconut-jaggery filling, steamed to perfection. It is typically enjoyed as a festive treat during occasions such as the festival of Ganesh Chaturthi.

In a pan, melt jaggery with a bit of water until it forms a thick syrup.

Add grated coconut and cardamom powder to the syrup, stir well, and cook until the mixture thickens. Set aside to cool.

Boil water in a pan, turn off the heat and immediately add the rice flour and salt, stirring continuously to avoid lumps.

Cover and let the rice flour mixture sit for about 5 minutes.

Once the dough is slightly cool, knead it until smooth.

Make small balls from the dough, flatten each ball and place a spoonful of the coconut-jaggery filling in the center, and seal it.

Place the dumplings in a steamer and steam for about 10-15 minutes until done.
