Kheer
Kheer is a classic Indian dessert, a type of rice pudding made with milk, rice, sugar, and flavored with cardamom, saffron, and topped with nuts. It's rich, creamy, and served either warm or cold.

Rinse the rice under cold water until water turns clear to remove starch.

Soak the rice in water for 30 minutes, then drain.

In a large heavy-bottomed pot, bring the milk to a boil.

Add the drained rice to the boiling milk, reduce the heat to low, and simmer.

Stir frequently to prevent the rice from sticking to the bottom of the pot.

Cook until the rice is soft and the milk has reduced to about half, approximately 40 minutes.

Add sugar, cardamom powder, and saffron threads. Mix well and cook for another 5 minutes.

Turn off the heat and add sliced almonds and pistachios.

Let the kheer cool to room temperature, then chill in the refrigerator for a few hours before serving.
