Cook the rice until soft and let it cool slightly.

Mix the rice with salt and enough curd to achieve a creamy consistency.

Prepare a tempering by heating oil in a small pan. Add mustard seeds and let them splutter. Then add curry leaves, hing (asafoetida), and green chilies. Sauté for a few seconds.

Pour the tempering over the curd rice and mix well.

Garnish with coriander leaves and optionally garnish with grated carrots or pomegranate seeds.
