Combine yeast, warm water, and a pinch of sugar in a bowl. Let it sit until frothy.

In a large bowl, mix flour, salt, and sugar.

Add the yeast mixture and milk to the flour mix and knead to form a dough.

Cover the dough and let it rise till it doubles in size.

Roll the dough into a rectangle and distribute slices of cold butter over two-thirds of the surface.

Fold the dough like a letter, turn it 90 degrees and roll it into a rectangle again.

Repeat folding and rolling twice more, chilling the dough for 30 minutes in between each fold.

Roll the dough one last time into a large rectangle. Cut it into triangles.

Roll each triangle from the wide end to the tip to form a crescent shape.

Place the croissants on a baking sheet, cover, and let them rise until puffy.
