Preheat the oven to 325 degrees F (162 degrees C).

In a saucepan, heat the heavy cream with the vanilla bean and its pulp over medium heat. Once hot, remove from heat and let sit for 15 minutes to infuse the vanilla flavor.

In a mixing bowl, whisk together the egg yolks and granulated sugar until well blended and slightly thickened.

Remove the vanilla bean from the cream and discard. Slowly add the cream into the yolk and sugar mixture, whisking continuously.

Pour the mixture into ramekins placed in a baking dish. Fill the baking dish with hot water halfway up the sides of the ramekins.

Bake for about 40-45 minutes, or until set but still trembling in the center.

Remove from oven and let cool, then refrigerate for several hours or overnight.

Before serving, sprinkle the tops of each custard with a thin layer of superfine sugar and use a kitchen torch to melt the sugar to form a hard, caramelized top layer. Let sit until the caramelized sugar hardens.
