Beignets
Beignets are a French pastry made from deep-fried choux dough, famously associated with the cafes of New Orleans. These pillowy sweets are usually powdered with sugar and served warm.

In a large bowl, dissolve yeast in warm water and let stand until frothy.

Add sugar, salt, eggs, and evaporated milk to the mixture and blend well.

Mix in half of the flour and continue to mix until smooth.

Add the shortening, followed by the remaining flour. Mix until the dough is smooth and elastic.

Cover the dough with a towel and let it rise until it's doubled in size.

Roll out the dough on a floured surface to about 1/4 inch thickness.

Cut into 2-inch squares and let the squares rise for about 45 minutes.

Heat oil in a deep-fryer to 360°F (180°C). Fry the squares in batches, flipping constantly, until they become puffy and golden brown.
