For dosa, add little water (around 60 ml for 600 g batter) to get desired consistency. Mix well with bare hands for 1 - 2 mins. After tawa has cooled down properly, gently spread the batter then put the flame from medium to high to cook it. For idli, mix well and use batter directly. Don't completely fill the mould, leave space to become fluffy and soft
